The Easter lamb: Our recipe for baking
The lamb is a central symbol at Easter. Baking and decorating the sweet Easter lamb is a lot of fun for children. It can be eaten for Easter breakfast or afternoon coffee. But it certainly also makes a good Easter gift for friends or acquaintances.
The importance of the Easter lamb
The lamb is a classic sacrificial animal. It symbolizes purity and innocence due to its white fur and defenselessness. The lamb has a strong religious connotation because it has been a symbol of Jesus Christ since ancient times. Thus, Jesus is often accompanied by the term “Lamb of God” to symbolize his innocence. The Easter lamb in its baked form is usually prepared on Maundy Thursday and is just as much a part of the traditionalEaster breakfast as the colorful Easter eggs and theyeast wreath.
Sweet Easter lamb
For this recipe you need a lamb baking pan. These shapes are available in metal or silicone. You can get them for less than ten euros!
What you need for the Easter lamb:
- 2 eggs
- 120g butter
- 100g icing sugar
- 100g flour
- 1 packet vanilla sugar
- 1 pinch of salt
- 60g almonds or hazelnuts (ground)
- 1/2 tsp baking powder
- some butter and breadcrumbs for the mold
- For decorating: icing or chocolate glaze, raisins or chocolate lentils, colorful sprinkles or desiccated coconut
Here’s how:
- Preheat the oven (top/bottom heat 180°C, hot air 160°C).
- Separate the eggs and beat the egg whites with half the sugar until stiff.
- Then beat the egg yolks with remaining sugar, butter, vanilla sugar and salt until fluffy.
- Stir in the flour mixed with baking powder and almonds or hazelnuts and fold in the egg whites.
- Grease the lamb tin with plenty of butter and sprinkle with breadcrumbs. Pour in the dough and smooth it out. Bake in a preheated oven on the lowest grid for 30-45 minutes.
- After baking, wrap the mold in a damp cloth. So the lamb can be easily detached from the mold after about 10 minutes and can then cool down.
Decorate Easter lamb
- When the lamb has cooled down, you can simply dust it with a little icing sugar or glaze it with frosting or chocolate (light or dark).
- You can sprinkle the glaze with sugar sprinkles or desiccated coconut. Just let your imagination run wild!
- For the eyes of the lamb, simply break apart a toothpick and skewer a raisin. Or you can put two chocolate lenses on the glaze.
- A red ribbon is tied around the neck for decoration, maybe even with a bell on it (tip: steal from the chocolate bunny).
