Let the finished puff pastry sheets defrost and then roll them out on a floured work surface to double their size. Cut each into five strips and spread half a teaspoon of mustard on the strips of dough. Leave room at one end for gluing. Then place one sausage on the other side of each strip and roll it up. With a little egg yolk, the dough sticks together well.
Line a baking tray with parchment paper and place the pastry rolls on it so that the glued areas are on the bottom. Put the remaining egg yolk on the dough rolls and sprinkle them with the sesame seeds. Then you only have to bake them for 20-25 minutes until golden and let them cool down.
