Festive roast beef in the roaster

With this recipe you will definitely succeed with the roast beef. Just plan enough time, because the meat should simmer in the roaster or in the Roman pot for three hours so that it becomes wonderfully tender.

You need ingredients:

200 g smoked bacon
2 onions
1 large carrot
1 celeriac
1000 g beef
mustard
curly parsley
thyme
pepper
herb grated lemon zest
salt, pepper, cloves
tarragon
flour
Madeira
1 bay leaf

Preparation of beef roast:

  • Cut the bacon into thin slices and place them on the base of a heavy cast iron roaster. Spread the sliced ​​vegetables and herbs on the bacon. Then sprinkle some grated lemon zest over it.
  • You should have rubbed the beef with mustard a few hours beforehand. Now salt the meat and put it on the vegetables. Put a few strips of bacon on top.
  • Now fill about a third of the roaster with water and close it with a lid. Sear the meat, then lower the heat and let it simmer for three hours. Drain the broth, degrease it, season with Madeira and thicken with flour if necessary.
