A roast pork with red wine sauce is one of the classic dishes at Christmas time. But it also tastes good and is easy to prepare.

You need ingredients:

1 kg roast pork
1 bunch of soup vegetables
1 large onion
Salt, pepper
Some oil
1 clove of garlic
3 bay leaves
500 ml vegetable stock
200 ml red wine
Some dark sauce thickener

Preparation of roast pork with red wine sauce:

  • First you clean and dice the soup vegetables and the onion. Peel and crush the garlic. Then you season the roast pork with salt and pepper and cut a rectangular pattern into the rind.
  • Fry them in a little oil on each side, leaving out the rind. Add the onion, garlic, some peppercorns, the bay leaves and the soup vegetables and pour over 200 ml of vegetable stock. Put the roast in the oven and let it bake at 220°C for half an hour.
  • Pour another 250 ml of vegetable stock over it. Set the oven to 200°C and let the roast cook for another hour.
  • Then take it out of the oven and keep it warm. Strain the sauce through a sieve and let it simmer with the rest of the vegetable stock and the red wine. Then bind them with the sauce thickener until the desired creaminess is achieved.
