Prague ham with peppers and onions

Prague ham tastes particularly good when it has been rubbed vigorously with spices and herbs, as in this recipe, before it is cooked in the oven for four to five hours.

You need ingredients:

1.5 kg Prague ham
½ bunch of rosemary
Salt, pepper
250 g onions, cut into wedges
1 liter of stock
1 tin of tomatoes
Sugar
250 g of peppers
Fat for frying
Thyme
Coriander
Paprika powder

Preparation of Prague ham:

  • First you wash the ham, score the rind and rub it with the herbs and spices; set aside half of the rosemary.
  • Fry the ham all over in hot fat except for the rind side, then place it with the rind side up on the roasting pan of the oven. Cover it all over with the onions, the diced tomatoes and peppers and the rosemary. Top up with stock.
  • Cook the ham in a preheated oven at 180°C for about 4-5 hours. In between, you should always baste the roast with stock from the fat tray at least every 15 minutes and cover it after the rind has browned slightly.
  • 30 minutes before the end of the cooking time, grill the roast on a grill in the oven. Meanwhile, drain the sauce and thicken it with some of the overcooked, mashed vegetables. seasoning to taste.
